When an automobile appliance overheats and the radiator water begins to boil, the car can still be driven some distance before catastrophic engine damage occurs. Why? What determines the beginning of really disastrous overheating?

Is your temp criterion reading abnormal hot? If so your thermostat may be bad. Or you might need to get a new radiator cover as it is no longer sealing correctly.
